A soft, round Moroccan bread cooked on a griddle. It puffs up, leaving a pocket for fillings.
Msemen
A square, layered flatbread — flaky and buttery, a little like a paratha.
Kefta
Seasoned ground meat, shaped and grilled.
Brochettes
Skewers of marinated meat, grilled over charcoal.
Couscous
Fine steamed semolina, served under meat, vegetables and broth. A Moroccan family classic.
